The carrageenan extacted from seeweed (Euchema spinosum) used us a material to evaluate the blood cholesterol concentration of high dietary fat rats (Rattus norvegicus). Twenty male rats were randomly divided into 5 groups of 4 rats. The first group has been fed with the basic food as a control group. The second group has been fed with basic food and 6% pig meat fat. The rat of each groups of III, IV and V have been fed with basic food,6% pig meat fat and supplemented by 6.25 mg/kg, 12.5 mg/kg. and 25 mg/kg bw/day orally for 75 days. After a month of treatments the blood samples were collected from retroorbital plexus four times eveuy 15 days. The blood samples were evaluated for cholesterol concentration by Cholesterol liquicolor CHON-PAD methods (Human, Germany). On the day 75, the aorta of all rats were removed after euthanized and fixed in formalin buffer for histopathologic preparation. The results of this study revealed that the carrageenan could decrease the blood cholesterol concentration and prevent the development of atherosclerotic lesions of rats.
